Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
Peel, core, and dice the apples into small pieces. Set aside.
In a bowl, whisk the eggs and sugar until creamy and light.
Add the oil, milk, and lemon or orange flavoring; mix well.
In another bowl, sift together the flour and baking powder.
Gradually fold the dry ingredients into the wet mixture until just combined.
Gently fold in the diced apples.
Pour the batter into the prepared pan and level the surface.
Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool before removing it from the pan. Dust with powdered sugar if desired.
