Preheat the oven to 200°C (400°F).
Wash the potatoes thoroughly and slice them thinly, about 3 mm thick. Do not peel unless preferred.
In a bowl, mix the olive oil with garlic powder, paprika, thyme, salt, and pepper.
Toss the potato slices in the mixture to coat evenly.
Line a baking sheet with parchment paper and spread out the slices in a single layer.
Bake for 25–30 minutes, flipping halfway through, until golden brown and crisp.
Optional: Sprinkle with cheese in the last 5 minutes of baking.
