Start by grating the zucchinis and placing them in a clean kitchen towel to squeeze out the excess moisture.
In a large mixing bowl, whisk the eggs and milk together.
Add the flour, salt, black pepper, dried parsley, dried garlic, paprika, and oregano. Mix until well combined.
Stir in the grated zucchini and grated cheese until the mixture is smooth and well incorporated.
Heat some vegetable oil in a large frying pan over medium heat.
Scoop spoonfuls of the batter into the pan and flatten them slightly to form pancakes.
Cook each pancake for 3-4 minutes on each side, or until golden brown.
