Savory-Sweet Baked Oat & Fruit Muffins

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

Mix the Dry Ingredients: In a large bowl, combine rolled oats, whole wheat flour, almond flour, baking powder, cinnamon, nutmeg, and salt.

Prepare the Wet Ingredients: In another bowl, whisk together the milk, eggs, honey or maple syrup, and melted coconut oil or butter.

Combine the Wet and Dry: Pour the wet ingredients into the dry ingredients and mix until just combined.

Add the Fruit and Nuts: Gently fold in the blueberries, diced apple or pear, and walnuts (if using).

Bake: Divide the batter evenly into the muffin tin and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Serve: Let the muffins cool for a few minutes in the tin, then transfer to a wire rack to cool completely.
