Hearty Veggie Stir-Fry with Baked Beans

Prep the Vegetables: Start by peeling and slicing the carrots, and slicing both the yellow and green peppers into strips. Trim the green beans and set them aside.

Stir-Fry the Veggies: Heat a large pan or wok over medium heat and add a tablespoon of olive oil (if using). Add the carrots, green beans, and peppers to the pan and stir-fry for 5-7 minutes, until they start to soften but still retain some crunch.

Add the Baked Beans: Stir in the baked beans (drained and rinsed if necessary) and cook for another 2-3 minutes, allowing the beans to heat through.

Season: Season the stir-fry with salt and pepper to taste. You can also add any fresh herbs or spices for extra flavor (e.g., thyme, paprika, or chili flakes for a little heat).

Serve: Once everything is cooked to your liking, serve immediately. Garnish with fresh herbs or a sprinkle of sesame seeds if desired.
