Rub the steaks with olive oil, minced garlic, salt, and pepper.
If using rosemary, sprinkle it over the steaks.
Grill the steaks for about 4-5 minutes per side for medium-rare, or longer if you prefer a different doneness.
Once done, remove the steaks from the grill and let them rest for 5 minutes before serving.
For the Roasted Potatoes:
Preheat the oven to 400°F (200°C).
In a large bowl, toss the cubed potatoes with olive oil, garlic powder, thyme, salt, and pepper.
Spread the potatoes in a single layer on a baking sheet.
Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden and crispy on the outside.
