Preheat your grill or grill pan over medium-high heat.
In a small saucepan, melt the butter over low heat. Add minced garlic and cook for 1–2 minutes until fragrant. Remove from heat and stir in the parsley and lemon juice.
Toss the prawns with olive oil, salt, and pepper.
Grill the prawns for about 2–3 minutes per side, until pink and opaque.
Brush the prawns with the garlic butter mixture during the last minute of grilling.
Serve hot with lemon wedges and extra garlic butter for dipping.
