In a large mixing bowl, whisk together the egg, milk, vanilla extract, and olive oil.
In a separate bowl, combine the flour, baking powder, salt, and sugar.
Gradually add the dry ingredients to the wet ingredients, whisking until smooth and lump-free.
Heat a non-stick pan over medium heat and lightly grease if necessary.
Pour a small amount of batter into the pan, forming a round pancake.
Cook for 2–3 minutes until bubbles form on the surface, then flip and cook another 1–2 minutes until golden brown.
Repeat with the remaining batter.
