Preheat Oven and Prepare Muffin Tin:
Preheat your oven to 375°F (190°C). Lightly grease a muffin tin or use silicone muffin cups to prevent sticking.

Prepare the Egg Mixture:
In a large bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.

Add Veggies and Sausage:
Stir in the chopped chicken sausage and mixed veggies into the egg mixture. Feel free to get creative and add any vegetables your kids enjoy, such as diced bell peppers, spinach, or even cheese.

Fill Muffin Tin:
Pour the egg mixture evenly into the muffin cups, filling them about 3/4 of the way full.

Bake:
Place the muffin tin in the oven and bake for about 15-20 minutes, or until the egg muffins are puffed up and set in the middle. You can check for doneness by inserting a toothpick—if it comes out clean, they’re ready!

Cool and Serve:
