Peel and dice the potatoes, then boil them in lightly salted water until just tender. Drain well.
In a bowl, mash the potatoes gently with a fork. Add the chopped onion, spinach, egg, salt, and pepper. Mix until combined.
Heat olive oil in a pan over medium heat.
Shape the potato mixture into small patties or drop spoonfuls into the pan. Flatten slightly.
Fry until golden brown and crispy on both sides (about 3–4 minutes per side).
Remove and place on paper towels to drain excess oil. Serve warm.
