Cheesy Potato and Onion Skillet: A Surprisingly Satisfying Meatless Dish

In a large bowl, combine the grated potatoes, chopped onion, minced garlic, and flour.

Crack in the eggs and season with salt and black pepper. Mix everything thoroughly.

Heat vegetable oil in a large skillet over medium heat.

Spread the potato mixture evenly in the pan and flatten it like a thick pancake.

Cover and cook for about 7–10 minutes on one side until golden brown.

Flip carefully, cover, and cook the other side for 7–10 minutes.

Top with grated cheese and diced tomato, then cover again for 2–3 minutes until the cheese melts.

Garnish with fresh dill and serve hot.
