Begin by boiling the peeled potatoes in salted water until soft, about 15-20 minutes. Drain and mash them until smooth.
Preheat the oven to 180°C (350°F) and grease a baking dish with olive oil.
In a pan, sauté the minced garlic in a little olive oil for 1-2 minutes until fragrant. Add the chopped spinach and cook until wilted.
In a large bowl, combine the mashed potatoes, sautéed spinach and garlic, eggs, grated Parmesan cheese, and breadcrumbs. Season with salt and black pepper to taste.
Transfer the potato mixture into the prepared baking dish. Sprinkle mozzarella cheese on top, followed by some extra breadcrumbs.
Bake for 25-30 minutes until golden and bubbly. Serve hot and enjoy!
