Vegan Vegetable Lo Mein: A Flavorful Stir-Fry Delight

Cook the lo mein noodles according to the package instructions. Drain and set aside.

Heat the sesame oil in a large skillet or wok over medium heat.

Add the garlic and ginger, cooking for about 1 minute until fragrant.

Toss in the bell pepper, mushrooms, carrot, and zucchini. Stir-fry for about 4-5 minutes, until the vegetables are tender but still crisp.

Add the cooked noodles to the pan, followed by the soy sauce, rice vinegar, and maple syrup. Stir everything together until well coated.

Cook for another 2-3 minutes to allow the flavors to meld.

Remove from heat, sprinkle with chopped green onions and sesame seeds for garnish.

Serve immediately and enjoy your vegan vegetable lo mein!
