Preheat the oven to 400°F (200°C).
Pierce the sweet potatoes with a fork and bake them on a baking sheet for 40-45 minutes, or until tender.
While the sweet potatoes are baking, heat a skillet over medium heat. Add the ground beef or turkey (or black beans for a vegetarian option) and cook until browned. Drain any excess fat.
Stir in the taco seasoning, black beans, corn, and diced tomatoes. Cook for an additional 5-7 minutes, stirring occasionally, until heated through and well combined.
Once the sweet potatoes are done, slice them down the middle and gently mash the inside.
Spoon the taco mixture into the sweet potatoes. Top with shredded cheese and return to the oven for 5 minutes, or until the cheese is melted and bubbly.
Serve immediately, and enjoy!
