Wash the lemons thoroughly and slice them into quarters, removing any seeds.
Sprinkle salt into the bottom of the jar, then pack the lemon quarters tightly, sprinkling more salt between layers of lemons.
If using sugar, add a small amount of sugar on top of the lemons as you layer.
Squeeze lemon juice from the additional lemons and pour it into the jar, covering the lemons completely. You can press down on the lemons to release juice if needed.
Close the jar tightly and leave it at room temperature for 3-4 days. Shake it gently every day to ensure the salt and juice mix well.
After 4 days, store the jar in a cool, dark place like a pantry. The lemons will be ready to use in about 3 weeks but can last for up to a year when sealed properly.
