Preheat the oven to 200°C (400°F).
In a large bowl, toss the chicken pieces with 1 tablespoon of olive oil, oregano, garlic powder, paprika, salt, and pepper.
In a separate bowl, combine zucchini, cherry tomatoes, bell pepper, and red onion. Drizzle with the remaining olive oil and season with a little salt and pepper.
In a large baking dish, spread the seasoned vegetables. Top evenly with the marinated chicken.
Bake uncovered for 25–30 minutes or until the chicken is cooked through and the vegetables are tender.
Sprinkle crumbled feta over the dish and return to the oven for 5 more minutes (optional).
Garnish with chopped parsley before serving.
