Heavenly Oat & Fruit Delight (Gluten-Free & Sugar-Free Cake)

Make Oat Flour:
Blend the oats into a fine powder using a blender. Transfer to a large bowl and mix in the baking powder and cinnamon.

Add the Liquids:
Pour in the plant milk and whisk until the batter is smooth. Add the oil and mix again.

Incorporate Fruits & Veggies:
Add raisins, grated carrot, and grated apple. Stir well to combine.

Beat the Eggs:
In a separate bowl, beat the eggs until lightly frothy. Add to the batter and mix thoroughly.

Add Dried Fruits:
Chop the apricots and prunes into small pieces and fold them into the mixture.

Bake the Cake:
Line a 16 cm cake pan with parchment paper. Pour in the batter and smooth the surface.
Bake at 180°C (360°F) for 35–40 minutes, or until golden and firm to the touch.

Cool & Serve:
