In a large bowl, combine the shredded chicken, chopped broccoli, eggs, rolled oats or oat flour, and finely chopped onion (if using). Season with garlic powder, salt, pepper, and any spices you prefer. Mix everything together until well combined.
Form the Patties:
Using your hands, take a small portion of the mixture and form it into small patties. Repeat until all the mixture is used up.
Cook the Patties:
Heat a drizzle of olive oil in a large pan over medium heat. Once the oil is hot, add the patties to the pan. Cook for 4-5 minutes on each side, or until golden brown and crispy on the outside.
