Prepare the Dough: In a large mixing bowl, cream together the butter and powdered sugar until smooth. Add the vanilla extract, almond extract (if using), and a pinch of salt. Gradually add the flour and mix until the dough forms.
Roll Out the Dough: On a lightly floured surface, roll the dough into a thin rectangle, about 1/8 inch thick.
Add the Jam: Spread a thin layer of raspberry or strawberry jam over the surface of the dough.
Roll and Shape: Starting from one end, carefully roll the dough into a tight log. Once rolled, use a sharp knife to cut the dough into 1/2-inch wide slices. Arrange the slices on a baking sheet lined with parchment paper.
Bake: Preheat the oven to 350°F (175°C) and bake the cookies for 12-15 minutes, or until golden brown around the edges.
