Fudgy Brownie Cookies Delight

Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.

Melt the chocolate and butter together in a heatproof bowl over a pan of simmering water or in the microwave in short bursts. Let it cool slightly.

In a mixing bowl, beat the sugar and egg until pale and fluffy.

Stir in the vanilla extract and the melted chocolate mixture.

Fold in the flour until just combined. The dough should be thick but slightly sticky.

Drop spoonfuls of the dough onto the prepared baking sheet, leaving space between each.

Bake for 8–10 minutes, until the tops are crackly but the centers are still soft.

Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
