Preheat the Oven: Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure the cake doesn't stick.
Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract. Beat for about 2 minutes until the mixture is smooth and creamy.
Add Boiling Water: Slowly stir in the boiling water. The batter will be thin, but this is what makes the cake so wonderfully moist!
Bake: Divide the batter evenly between the prepared pans. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Cool the Cakes: Let the cakes cool in the pans for about 10 minutes before transferring them to wire racks to cool completely.
Assemble: Once the cakes have cooled, spread a generous layer of chocolate ganache between the layers, then cover the top and sides with more ganache. Smooth out the ganache for an elegant, glossy finish.
