Heat the olive oil in a large pot over medium heat.
Add onion, carrots, and celery. Sauté for 5–7 minutes, until vegetables are softened.
Add minced garlic and cook for 1 more minute.
Pour in the vegetable broth and bring to a boil.
Add the pastina and stir well. Reduce heat and simmer for 10–12 minutes, or until pasta is tender.
Season with salt and pepper to taste.
Stir in grated Parmesan just before serving.
Garnish with parsley if desired.
