Make the Parsley Sauce:
In a blender or food processor, combine parsley, garlic, lemon juice, olive oil, and salt. Blend until smooth. Add a little water if needed to adjust consistency.
Prepare the Calamari:
Heat olive oil in a skillet over medium-high heat. Add garlic and sauté for about 30 seconds.
Cook the Calamari:
Add the calamari rings to the skillet and cook for 2–3 minutes per side, until just opaque and tender. Do not overcook or they will become rubbery. Season with salt, pepper, and chili flakes if using.
Add Lemon:
Squeeze fresh lemon juice over the calamari right before removing from heat.
Serve:
Plate the calamari and drizzle generously with the parsley sauce. Serve warm with crusty bread or a side salad.
