Preheat oven to 175°C (350°F). Grease a bundt or 9x13-inch baking pan.
In a large bowl, beat the eggs with sugar, oil, and vanilla until smooth.
In a separate bowl, whisk flour, baking soda, cinnamon, and salt.
Gradually mix dry ingredients into the wet mixture.
Fold in apples and pecans.
Pour batter into the prepared pan.
Bake for 50–60 minutes, or until a toothpick inserted comes out clean.
Let cool for 15 minutes before adding glaze.
Caramel Glaze:
In a saucepan over medium heat, melt butter with brown sugar, milk, and salt.
Bring to a gentle boil, stirring constantly for 2–3 minutes.
Remove from heat and stir in vanilla.
Pour over the slightly cooled cake.
