In a medium saucepan, combine the oats, milk, and a pinch of salt. Bring to a simmer over medium heat, stirring occasionally.
Once the mixture starts to thicken (after about 5-7 minutes), add the diced apple, honey (or maple syrup), cinnamon, and nutmeg. Stir to combine and cook for another 2-3 minutes, allowing the apples to soften slightly.
Remove from heat and let the oatmeal sit for a minute or two to thicken further.
Serve in bowls and top with your choice of chopped nuts, raisins, or dried cranberries for extra texture and flavor.
