Preheat the oven: Preheat your oven to 180°C (350°F) and grease a cake pan with butter.

Prepare the pears: Peel and slice the pears. In a small pan, caramelize them by melting 2 tablespoons of sugar over medium heat. Stir the pears gently in the sugar until they soften and turn golden. Set aside to cool slightly.

Melt the chocolate: In a heatproof bowl, break the dessert chocolate into pieces and melt it gently in the microwave or over a double boiler. Stir until smooth and allow it to cool slightly.

Mix the dry ingredients: In a separate bowl, sift together the flour, baking powder, and a pinch of salt.

Beat the eggs and sugar: In a large mixing bowl, beat the eggs and 195 g of sugar until light and fluffy, about 5 minutes.

Combine the chocolate and egg mixture: Slowly pour the melted chocolate into the egg and sugar mixture, gently folding to combine until smooth.

Add the dry ingredients: Gradually add the dry ingredients to the wet mixture, folding them in gently with a spatula until just incorporated.

Add the pears: Gently fold in the caramelized pears into the cake batter.

Bake: Pour the batter into the prepared cake pan, spreading it evenly. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. The cake should rise and have a soft, moist texture.

Cool and serve: Let the cake cool in the pan for 10 minutes before transferring it to a wire rack. Allow it to cool completely before serving.
