Finely chop the shallot, black olives, and chives.
In a mixing bowl, combine the cooked tuna, chopped shallot, black olives, and chives.
Add the juice of 1/2 lemon and the spreadable cheese. Stir everything together until well combined. Set the filling aside.
Prepare the Puff Pastry:
Preheat the oven to 180°C (350°F).
Roll out the puff pastry onto a lightly floured surface. Cut the pastry into small squares (around 4x4 cm).
Assemble the Bites:
Place a small spoonful of the tuna mixture in the center of each puff pastry square.
Fold the corners of the pastry over the filling to form a pocket or triangle. Press the edges to seal them well.
Add the Egg Wash:
In a small bowl, whisk the egg yolk with 1 teaspoon of water.
Brush the egg wash over each pastry bite for a golden and glossy finish.
Bake:
Sprinkle sesame seeds over the top of each pastry bite.
Place the puff pastry bites on a baking tray lined with parchment paper.
Bake for 15-20 minutes, or until golden brown and crispy.
