In a large bowl, combine the whole wheat flour, instant dry yeast, salt, and powdered milk.
Make a well in the center and add the lukewarm water, olive oil, and honey (or maple syrup).
Mix the ingredients until they form a dough.
Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for 1-1.5 hours, or until it doubles in size.
Preheat the oven to 180°C (350°F).
Punch down the dough to release the air and shape it into a loaf.
Place the loaf in a greased bread pan, cover with a cloth, and let it rise for another 30 minutes.
Bake the bread for 30-35 minutes, or until the top is golden and the loaf sounds hollow when tapped.
Remove from the oven and let it cool on a wire rack before slicing.
