Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the crushed pineapple, sugar, flour, melted butter, and the beaten egg. Stir until well mixed.
Fold in the shredded cheddar cheese.
Pour the mixture into a greased 9x9-inch baking dish.
In a separate bowl, combine the crushed Ritz crackers with a bit of melted butter, then sprinkle the cracker mixture evenly over the top of the casserole.
Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbly.
Let the casserole cool slightly before serving.
