Preheat the oven: Preheat your oven to 180°C (350°F).
Prepare the apples: Core the apples, making sure to remove the seeds. Place them on a baking sheet.
Make the filling: In a small pan, melt the butter over medium heat. Add the cinnamon and brown sugar, stirring until the sugar is dissolved and the mixture becomes slightly syrupy.
Wrap the apples: Cut the puff pastry into squares large enough to wrap each apple. Place each apple in the center of a pastry square and spoon the cinnamon-sugar mixture into the center of each apple. Wrap the pastry around the apple, pinching the edges to seal it.
Bake: Place the wrapped apples on a baking tray lined with parchment paper. Bake for 25-30 minutes, or until the puff pastry is golden and crispy.
Make the caramel sauce: In a saucepan, combine the sugar and water over medium heat. Stir until the sugar has dissolved, then let it boil until it turns a deep amber color. Slowly add the whipping cream (be careful, as it will bubble up), stirring continuously. Add the lemon juice and salt, then cook for another 2-3 minutes until the sauce thickens.
Serve: Drizzle the caramel sauce over the baked apples, and serve warm with the cinnamon cream.
