Perfect, Soft, Fluffy Baked Coconut Doughnuts

Preheat the oven to 180°C (350°F) and grease a donut pan.

In a large bowl, whisk together flour, shredded coconut, sugar, baking powder, and salt.

In another bowl, combine coconut milk, eggs, vanilla extract, and melted coconut oil.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Spoon the batter into the donut pan, filling each cavity about ¾ full.

Bake for 12–15 minutes or until a toothpick comes out clean.

Allow to cool in the pan for 5 minutes, then transfer to a wire rack.

If glazing: whisk powdered sugar with coconut milk to desired consistency and dip donuts. Sprinkle with shredded coconut.
