Ingredients
For the Doughnuts:
1 ½ cups (180g) all-purpose flour
½ cup (50g) shredded coconut (unsweetened)
¼ cup (50g) sugar (granulated or coconut sugar)
2 teaspoons baking powder
¼ teaspoon salt
½ teaspoon vanilla extract
½ cup (120ml) coconut milk (or regular milk)
2 large eggs
¼ cup (60g) melted coconut oil (or vegetable oil)
Optional Coconut Glaze:
1 cup powdered sugar
2–3 tablespoons coconut milk
2 tablespoons shredded coconut (for garnish)
