Place the chopped potatoes in a pot and cover them with water. Add a pinch of salt and bring to a boil. Cook the potatoes for about 10-12 minutes, or until they are soft when pierced with a fork.
Prepare the Potatoes:
Drain the boiled potatoes and let them cool slightly. Once cooled, mash them lightly with a fork. Stir in the cornstarch and mix well until the mixture forms a dough-like consistency.
Shape the Potato Bites:
Take small portions of the potato mixture and roll them into bite-sized balls or discs. Set them aside on a plate.
Fry the Potato Bites:
Heat oil in a pan over medium heat. Once the oil is hot, fry the potato bites until they are golden and crispy on all sides. Remove them from the pan and place them on paper towels to drain any excess oil.
Make the Cheese Sauce:
In a saucepan, melt the butter over medium heat. Add the flour and whisk to make a smooth roux. Slowly add the milk while stirring to prevent lumps from forming. Cook for a few minutes until the sauce thickens. Stir in the grated cheddar cheese, garlic powder, and season with salt and pepper. Keep stirring until the cheese has fully melted and the sauce is smooth.
Serve:
Drizzle the cheese sauce over the crispy potato bites and serve warm. Garnish with extra cheese or herbs if desired.
