Preheat the oven to 180°C (350°F). Line a muffin tin with paper liners or grease it lightly with oil.
In a bowl, mash the banana and whisk together with the eggs, sour cream (or Greek yogurt), and honey or maple syrup.
In a separate bowl, mix the oats, baking powder, cinnamon, salt, cranberries, raisins, and chopped apples.
Add the hot water to the oats mixture and stir to combine.
Gently fold the wet ingredients into the dry mixture and stir until well combined.
Spoon the mixture into the muffin tin, filling each muffin cup about 3/4 full.
Sprinkle the nuts on top for added crunch.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool for a few minutes before enjoying!
