Mom’s Famous Cream Puffs

Prepare the Pastry Shells:

Preheat oven to 400°F (200°C).

In a saucepan, combine butter and water. Bring to a boil.

Remove from heat and stir in flour until it forms a ball.

Let cool slightly, then add eggs one at a time, mixing well after each.

Stir in vanilla.

Drop spoonfuls onto a baking sheet lined with parchment paper.

Bake for 30–35 minutes or until golden and puffed. Let cool completely.

Make the Filling:

In a cold mixing bowl, whip heavy cream until soft peaks form.

Add powdered sugar and vanilla if using. Continue whipping until stiff peaks form.

Assemble the Cream Puffs:

Slice each puff in half horizontally.

Fill with whipped cream and place the top back on.

Dust with powdered sugar if desired.
