Start by washing and slicing the zucchini into thin rounds or half-moons.
In a frying pan, heat a bit of butter or oil over medium heat. Add the zucchini and sauté until softened (about 5–7 minutes).
In a separate pot, cook the oatmeal according to the package instructions, using water or milk. Add a pinch of salt while cooking.
Once the zucchini is cooked, mix the sautéed zucchini with the cooked oatmeal. Stir to combine.
Grate the cheese and sprinkle it over the zucchini and oatmeal mixture. Stir until the cheese melts and everything is well combined.
Serve hot, garnished with extra cheese if desired.
