1. Prepare the herb butter:

In a small bowl, combine the softened butter, parsley, rosemary, garlic, lemon juice, salt, and pepper.

Mix well until all ingredients are fully incorporated.

Transfer the butter mixture onto a piece of plastic wrap and roll it into a log shape.

Refrigerate for at least 30 minutes to allow the butter to firm up.

2. Prepare the ribeye steaks:

Preheat your grill to medium-high heat.

Pat the ribeye steaks dry with paper towels to remove excess moisture.

Rub both sides of the steaks with olive oil, then season generously with salt, pepper, and fresh thyme (optional).

Place the steaks on the hot grill and cook for about 4-5 minutes on each side for medium-rare (adjust cooking time for desired doneness).

Remove the steaks from the grill and let them rest for about 5 minutes.

3. Assemble and serve:

Slice the herb butter into rounds.

Place a slice of herb butter on top of each ribeye steak while it’s still hot, allowing it to melt into the meat.

Serve immediately with your favorite sides, such as roasted vegetables or mashed potatoes.

Tips
For a deeper flavor, marinate the steaks for 30 minutes before grilling.

Adjust the herb butter by adding different herbs like tarragon or chives for a unique twist.

For the perfect grill marks, avoid flipping the steak too frequently.

Enjoy your juicy, flavorful ribeye steaks with the irresistible herb butter!
