Golden Cheesy Potato Bites

Peel and boil the potatoes until soft (about 15–20 minutes), then drain and mash them.

Add cornstarch, salt, and pepper to the mashed potatoes and mix well.

Fold in chopped parsley.

Take a spoonful of the mixture, flatten it in your palm, place a cube of mozzarella in the center, and shape it into a ball or patty.

Repeat with the remaining mixture.

Heat oil in a skillet over medium heat and fry the bites until golden and crispy on both sides.

Drain on paper towels and serve warm.
