Heat a tablespoon of olive oil in a frying pan over medium heat.
Season the cleaned and scaled brims with salt and pepper on both sides.
Once the pan is hot, carefully place the fish in the pan and fry for about 3-4 minutes per side, or until the fish is golden brown and crispy.
Remove from the pan and set aside to drain on paper towels.
For the light bread:
Preheat the oven to 190°C (375°F) and grease a baking dish.
In a large mixing bowl, combine the flour, cornmeal, sugar, baking powder, and salt.
Add the milk, melted butter, and egg to the dry ingredients and stir until the mixture is smooth and well combined.
Pour the batter into the greased baking dish and bake for 25-30 minutes, or until the bread is golden on top and a toothpick inserted comes out clean.
Let the bread cool slightly before serving.
