Family-Favorite Baked Potato and Meat Casserole

Prepare the potatoes: Preheat your oven to 375°F (190°C). Boil the sliced potatoes in salted water until tender, about 10-15 minutes. Drain and set aside.

Cook the meat: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until soft. Add the ground beef or turkey and cook until browned, breaking it apart with a spoon. Season with salt, pepper, and thyme (if using). Set aside.

Prepare the casserole: In a large baking dish, layer half of the boiled potatoes at the bottom. Top with half of the cooked meat mixture and half of the shredded cheese. Repeat with the remaining potatoes, meat, and cheese.

Make the creamy sauce: In a small saucepan, melt the butter over medium heat. Add the sour cream and milk, stirring until smooth. Pour the creamy sauce over the casserole layers.

Bake: Cover the casserole with aluminum foil and bake for 20-25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and bubbly.

Serve and garnish: Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.
