Delicious Oatmeal and Egg Cheese Pancake

Prepare the batter: In a blender or food processor, combine the oats, eggs, yogurt, salt, red pepper flakes (if using), and Italian herbs. Blend until smooth to form a pancake batter.

Cook the pancakes: Heat a non-stick skillet over medium heat and add the avocado oil. Once the oil is heated, pour a small amount of batter into the skillet to form a pancake. Sprinkle some shredded mozzarella cheese on top.

Flip and cook: After 2-3 minutes, or when the edges of the pancake start to set, carefully flip it. Cook for another 2-3 minutes, or until both sides are golden and crispy.

Serve: Once the pancakes are cooked, remove them from the skillet and place them on a serving plate. Garnish with fresh parsley and serve immediately.
