In a bowl, combine the olive oil, lemon juice, minced garlic, paprika, dried oregano, salt, and pepper to create the marinade.
Place the chicken breasts in the marinade, making sure they are well-coated. Cover and refrigerate for at least 30 minutes, preferably 1-2 hours for deeper flavor.
While the chicken is marinating, cook the rice according to package instructions. Once cooked, fluff with a fork and set aside.
Heat a grill pan or skillet over medium-high heat and cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked through. Let the chicken rest for a few minutes before slicing it.
To assemble the bowl, layer a portion of rice at the bottom of each serving bowl. Top with the sliced chicken, cucumber, cherry tomatoes, red onion, olives, and crumbled feta cheese.
Drizzle with tzatziki sauce or your preferred Mediterranean dressing and garnish with fresh parsley.
