Preheat the oven to 200°C (400°F). Line a baking sheet with parchment paper.
In a large bowl, mix the olive oil, minced garlic, paprika, oregano, garlic powder, salt, and pepper.
Add the potato wedges and toss to coat evenly.
Sprinkle half of the Parmesan cheese over the potatoes and mix again.
Arrange the wedges skin-side down on the baking sheet in a single layer.
Bake for 35–40 minutes, turning once halfway, until golden and crispy.
Sprinkle with the remaining Parmesan and fresh parsley before serving.
