Preheat the oven to 160°C (320°F).
In a bowl, mix flour and 50 g sugar.
Add cold butter cubes and rub with fingers or use a pastry cutter until mixture resembles fine crumbs.
Knead briefly to form a smooth dough (do not overwork).
Roll out the dough to 1 cm thickness and cut into shapes.
Place on a baking tray lined with parchment paper.
Sprinkle remaining sugar over the cookies.
Bake for 20–25 minutes or until pale golden.
Let cool completely on a wire rack.
