Heat the olive oil in a large skillet over medium heat.
Add the onion and garlic, and sauté until soft and golden.
Add the sliced zucchini, season with salt, pepper, and oregano.
Cook for about 10 minutes, stirring occasionally, until the zucchini starts to soften.
Add the chickpeas and stir well to coat them in the juices and herbs.
Cook for another 5–7 minutes until everything is tender and golden.
Serve warm, sprinkled with fresh herbs and cheese if desired.
