Arrange the sliced yellow squash in a single layer on a baking sheet lined with parchment paper or lightly greased.
Drizzle the olive oil over the squash slices, making sure they’re well coated.
In a small bowl, mix the grated Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
Sprinkle the Parmesan mixture evenly over the squash slices.
Bake in the preheated oven for 20-25 minutes, or until the squash is tender and the topping is golden and crispy.
Remove from the oven and garnish with fresh chopped parsley before serving.
