Prepare the bacon: In a skillet, cook the bacon over medium heat until crispy. Remove from the pan and place on paper towels to drain excess fat. Once cool, crumble into small pieces.
Cook the beef: In the same skillet, add the ground beef. Season with salt and pepper, and cook over medium heat for 7-10 minutes or until browned and cooked through. Add the crumbled bacon and Parmesan cheese, mixing well. Remove from heat.
Prepare the buns: Preheat your oven to 200°C (400°F). Cut the burger buns in half and place them on a baking sheet.
Assemble the bombs: Take a small portion of the meat mixture and form it into a ball. Place this ball in the center of the bottom half of a burger bun. Press the bun top over the meat and press the edges to seal. Repeat with the remaining buns and meat mixture.
Bake the bombs: Brush the tops of the buns with olive oil. Bake for 15-20 minutes or until the buns are golden and crispy.
Prepare the toppings: While the bombs are baking, wash and dry the lettuce leaves, slice the tomato and pickles.
Assemble and serve: Once the bombs are done, remove from the oven and let cool slightly. Open the bombes, add a lettuce leaf, tomato slices, and pickles. Top with ketchup and mustard, close, and serve hot.
