Preheat your oven: Set your oven to 350°F (175°C).
Prepare the batter: In a large bowl, whisk together the eggs and sugar until smooth. Add the milk and sunflower oil, mixing well.
Add dry ingredients: Sift the flour, baking powder, and salt into the wet ingredients. Stir until fully combined. Add the grated lemon zest and mix it into the batter.
Prepare the pie dish: Grease a pie dish or round baking pan. Pour the batter into the pan, smoothing the top evenly.
Add the apple slices: Layer the thinly sliced apples over the batter in a circular pattern, pressing them slightly into the batter.
Add butter and sugar topping: Drizzle the melted butter over the apples, then sprinkle the sugar on top.
Bake: Place the pie in the preheated oven and bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
Cool and serve: Allow the pie to cool for 15 minutes before slicing. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream!
