Soak the oats and oat groats in warm water for 10–15 minutes until softened.
Drain excess water and place the soaked oats in a blender or food processor.
Add eggs, grated apples, salt, and any optional spices or flavorings.
Blend until a thick batter forms.
Pour batter into a lightly greased non-stick pan over medium heat.
Cook like pancakes: 2–3 minutes per side until golden and cooked through.
Serve warm as is, or with a dollop of Greek yogurt.
