Zucchini Bake Delight with Mozzarella Topping

Grate the zucchini and sprinkle with salt. Let it sit for 5 minutes.

Squeeze out the moisture from the zucchini using a clean towel or sieve.

In a large bowl, combine the zucchini, bell pepper, diced tomatoes, parsley, spring onions, and garlic.

Add eggs, yogurt, salt, pepper, and herb mixture. Mix well.

Stir in the flour and baking powder to form a thick batter.

Grease a baking dish with olive oil and pour the mixture in evenly.

Bake for 15 minutes in a preheated oven at 180 °C / 350 °F.

Remove from the oven and top with tomato slices, sliced mozzarella, and grated pizza mozzarella.

Return to the oven and bake for another 10 minutes or until golden and melted.
